- [1981 - 2003] The Southcliffe Hotel Folkestone. Commenced as kitchen assistant, finally reaching the position of Head Chef in 1995. Duties included the sourcing preparation and cooking of meals for the hotel restaurant and banqueting rooms. The ordering of stock, implementing a proactive health and hygene regime and supervision of the kitchen and restaurant teams.
